Does this change how the photo looks?

Does it remove the orientation flag too?
Yes, and it applies the rotation to the pixels first, so the photo still appears the right way up.
Does it clean PNG and WebP as well as JPEG?
Yes. PNG text chunks and WebP metadata blocks go the same way, because only the decoded pixels survive a canvas round trip. Embedded colour profiles are dropped with them, so a wide-gamut photo can shift slightly towards sRGB.
Is stripping metadata enough before posting publicly?
It removes the part people forget, but it cannot remove what the picture itself shows — a house number, a name badge, a reflection in a window, a school uniform. Look at the image as well, and use Blur / Pixelate Image for anything visible.
